Ethics in life is everything. It is a great understatement to say that
trying to run an ethically green café in the middle of a city in the
twentyfirst century is a challenge. It is not just a challenge. It is expensive,
labor intensive, and horribly inconvenient.
But we do it. We shun anything that is ready made. We buy our vegetables as fresh as we can. We squeeze our own garlic, mince our own parsley, chop our own onions, slice our own mushrooms
and zest our own lemons. Visit us any morning before 9:00 am and you will see all this
chopping in action. It’s our way of putting love into the food. We do our best to be deep green,
and if we are still a bit pale around the edges it isn’t because we’re not trying. You can be our fertilizer by refusing to take bags
and bringing in your own containers for take-out.
