REDUCE We have very little to throw away. Our food scraps are used for compost. Our carry-out containers & utensils (bowls, lids, cups, straws, forks, spoons) are biodegradable and agriculturally based. We encourage people to bring in their own carry-out containers. We recycle. We use environmentally friendly cleaning supplies such as Simple Green.

RECYCLE All glass, recyclable plastic, paper, aluminum & cardboard are taken to a recycle center. Our printed menus & fliers are printed on 100% recycled paper. The napkins used in the cafe are made from recycled paper.

REUSE We reuse grocery bags to send to-go orders home. We reuse buckets and containers in the cafe for storage or cleaning. Left over printed materials are used for scrap paper and to write customers orders on.

Ethics in life is everything. It is a great understatement to say that trying to run an ethically green café in the middle of a city in the twentyfirst century is a challenge. It is not just a challenge. It is expensive, labor intensive, and horribly inconvenient. But we do it. We shun anything that is ready made. We buy our vegetables as fresh as we can. We squeeze our own garlic, mince our own parsley, chop our own onions, slice our own mushrooms and zest our own lemons. Visit us any morning before 9:00 am and you will see all this chopping in action. It’s our way of putting love into the food. We do our best to be deep green, and if we are still a bit pale around the edges it isn’t because we’re not trying. You can be our fertilizer by refusing to take bags and bringing in your own containers for take-out.
